Sticky Chili Lime Chicken Thighs

Sticky Chili Lime Chicken Thighs are juicy boneless chicken thighs marinated with lime, honey, garlic, cilantro, and warm spices, then seared and finished with a glossy chili lime glaze. They need just 15 mins of cooking and make an easy, flavor packed dinner with rice, vegetables, or a crisp salad.

  • 2 pounds boneless skinless chicken thighs, about 6 to 8 thighs
  • ½ cup lime juice
  • ¼ cup honey
  • 2 tablespoons chopped cilantro
  • 2 tablespoons minced garlic
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 tablespoon onion powder
  • 1 teaspoon kosher salt
  • ½ teaspoon cayenne pepper
  • 2 tablespoons vegetable oil

Instructions

  1. Mix the marinade: Combine the lime juice, honey, cilantro, garlic, chili powder, cumin, onion powder, kosher salt, and cayenne in a large bowl.
  2. Marinate the chicken: Add the chicken thighs and turn until evenly coated. Cover and refrigerate for 20 mins.
  3. Sear the chicken: Preheat the oven to 400°F. Heat the vegetable oil in a large oven safe skillet over medium to medium high heat. Remove the chicken from the marinade, reserving the liquid, and sear for 2 to 3 mins per side until nicely browned.
  4. Finish in the oven: Transfer the skillet to the oven and bake for 8 to 10 mins, or until the thickest part of the chicken reaches 165°F.
  5. Reduce the glaze: Meanwhile, pour the reserved marinade into a saucepan and bring it to a full boil over medium heat. Reduce the heat and simmer for 5 to 10 mins until thickened and glossy.
  6. Glaze and serve: Brush the cooked chicken generously with the hot chili lime glaze and serve immediately.

Notes

  • Don’t marinate the chicken for longer than 4hr because the lime juice can begin to change its texture.
  • The reserved marinade has touched raw chicken, so it must come to a full boil before it’s used as a glaze.
  • For milder chicken, leave out the cayenne pepper.
