Quick Chicken Lettuce Wraps

Quick Chicken Lettuce Wraps are made with tender ground chicken, crisp carrots, red bell pepper, and a glossy honey soy sauce. They cook fast in one skillet and get finished with peanuts, green onions, and sesame seeds for fresh crunch.

Chicken Wraps

  • 1 lb. ground chicken
  • Salt and pepper, to taste
  • 1 tablespoon peanut oil, can sub avocado or olive oil
  • 3 cloves fresh garlic, minced
  • 1/3 cup julienned carrots
  • ½ red bell pepper, finely diced
  • 1 tablespoon smooth peanut butter, optional
  • 8 butter lettuce leaves, or romaine or iceberg

Sauce

  • ½ cup chicken broth
  • ¼ cup soy sauce
  • 3 tablespoons honey
  • 1 tablespoon lime juice
  • 1 teaspoon sriracha, can sub hot sauce
  • ½ teaspoon ground ginger
  • ¼ teaspoon sesame oil
  • 1 tablespoon cornstarch

Toppings

  • 1/3 cup honey roasted peanuts
  • 3 green onions, sliced
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Mix the sauce: Whisk the chicken broth, soy sauce, honey, lime juice, sriracha, ground ginger, sesame oil, and cornstarch until smooth.
  2. Cook the chicken: Season the ground chicken with salt and pepper. Heat the peanut oil in a large skillet over medium high heat, then add the chicken and cook for about 6 mins, breaking it into small crumbles.
  3. Add the vegetables: Stir in the garlic, carrots, and red bell pepper. Cook for 1 to 2 mins, until the vegetables are bright and slightly softened.
  4. Thicken the filling: Pour in the sauce and bring it to a boil. Stir in the peanut butter if using, then cook for 1 to 2 mins, until the sauce turns glossy and coats the chicken.
  5. Assemble the wraps: Spoon the warm chicken filling into lettuce leaves. Top with honey roasted peanuts, green onions, and toasted sesame seeds.

Notes

Keep the lettuce, toppings, and chicken filling separate if making these ahead so the wraps stay crisp.
If the chicken releases a lot of liquid, drain the excess before adding the sauce so the filling thickens nicely.
Store leftover chicken filling in an airtight container in the fridge for up to 4 days. Reheat until hot before serving.
