Pan Seared Beef Power Plate

Pan Seared Beef Power Plate is a hearty high protein plate with juicy steak, caramelized onions, boiled eggs, creamy avocado, and crisp cucumber. It comes together in about 25 mins and makes an easy low carb lunch or quick dinner when you want something filling without a lot of prep

Ingredients

  • 5 to 6 oz thin cut beef steak
  • 2 large eggs
  • ½ ripe avocado
  • ½ cucumber, peeled and sliced
  • ¼ small onion, sliced
  • 1 tsp olive oil or butter
  • ½ tsp garlic powder
  • ½ tsp sesame seeds
  • ½ tsp everything bagel seasoning
  • Salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Boil the eggs: Place the eggs in a small saucepan and cover with water. Bring to a boil and cook until the whites and yolks are fully set, then cool, peel, and cut each egg in half.
  2. Season the steak: Pat the steak dry with paper towels. Season both sides with salt, black pepper, and garlic powder.
  3. Sear the steak: Heat olive oil or butter in a skillet over medium high heat. Add the steak and sear until deeply browned on both sides and cooked to your preferred doneness, then transfer it to a plate to rest.
  4. Cook the onions: Add the sliced onion to the same skillet. Cook for 4 to 5 mins, stirring often, until soft, glossy, and golden around the edges.
  5. Prep the sides: Slice the cucumber into thick rounds or half moons. Cut the avocado into thick wedges and sprinkle with sesame seeds, everything bagel seasoning, salt, and pepper.
  6. Assemble and serve: Slice the rested steak and arrange it on a plate with the onions, cucumber, avocado, and boiled egg halves. Sprinkle the eggs with extra seasoning and serve right away.

Notes

Pat the steak very dry before it hits the pan so it browns instead of steaming. For meal prep, store the steak, onions, and eggs together, but keep the avocado and cucumber separate until serving.
