Loaded Bratwurst Sliders with Beer Cheese pack browned beer bratwurst, tender beer braised onions, and creamy cheddar Gruyere beer cheese into soft pretzel buns. They take 1hr 30 mins from start to finish and make a hearty appetizer or casual dinner for sharing.

For the beer braised onions

  • 1 tablespoon butter
  • 1 large white onion, thinly sliced
  • 12 ounces German beer
  • 1 teaspoon sugar
  • 1 teaspoon Worcestershire
  • Kosher salt, to taste
  • Black pepper, to taste

For the bratwurst

  • 10 precooked beer bratwursts, cut into fourths

For the beer cheese

  • 10 ounces cheddar cheese, shredded
  • 4 ounces Gruyere cheese, shredded
  • 1 tablespoon cornstarch
  • 1 cup German beer
  • 2 cloves garlic, minced
  • 2 teaspoons spicy brown mustard
  • Hot sauce, to taste
  • Worcestershire, to taste

Instructions

  1. Soften the onions: Melt the butter in a medium frying pan. Add the sliced onion and cook until soft and translucent.
  2. Braise the onions: Stir in the sugar, Worcestershire, salt, and pepper. Pour in 12 ounces of beer and cook over medium heat for about 20 mins, until the onions are lightly caramelized and most of the liquid has cooked away. Transfer to a bowl and keep warm.
  3. Brown the bratwurst: Add the bratwurst pieces to the same pan and cook over medium high heat, turning as needed, until heated through with browned spots on the skins.
  4. Prepare the cheese: Toss the cheddar, Gruyere, and cornstarch together. Bring 1 cup beer to a boil in a small saucepan, stir in the garlic, then reduce to a simmer.
  5. Make the beer cheese: Add the cheese mixture one handful at a time, stirring constantly and letting each addition melt before adding more. Stir in the mustard, then season with hot sauce and Worcestershire to taste.
  6. Assemble the sliders: Divide the bratwurst among the pretzel bun bottoms. Spoon over the warm beer cheese and braised onions, add the bun tops, and serve hot.

Notes

Add the cheese gradually over gentle heat to keep the beer cheese smooth. For the best texture, store the bratwurst, onions, cheese, and buns separately, then reheat and assemble just before serving.
