Juicy Garlic Parmesan Chicken Meatloaf combines tender ground chicken, Parmesan, garlic, herbs, and panko under a buttery Parmesan glaze. It takes just 15 mins to prep and bakes into a comforting family dinner with a golden, cheesy finish.

  • 2 pounds ground chicken
  • 1 cup shredded Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 4 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • 1 half teaspoon black pepper
  • 1 half cup whole milk
  • 2 tablespoons unsalted butter
  • 1 quarter cup additional Parmesan cheese
  • 2 tablespoons fresh parsley

Instructions

  1. Preheat the oven: Heat the oven to 375°F. Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. Mix the meatloaf: Combine the ground chicken, 1 cup Parmesan, panko, eggs, most of the minced garlic, garlic powder, onion powder, basil, dried parsley, salt, pepper, and milk. Mix gently just until evenly combined.
  3. Shape and bake: Form the mixture into an even loaf and place it on the prepared baking sheet or in the loaf pan. Bake for 40 to 45 mins, until the center reaches 165°F.
  4. Prepare the glaze: Melt the butter in a small saucepan over medium heat. Add the reserved minced garlic, additional Parmesan, and some of the fresh parsley, then cook briefly until slightly thickened.
  5. Glaze the loaf: Brush the Parmesan butter mixture over the meatloaf. Return it to the oven for 5 to 7 mins, until the topping is golden and bubbling.
  6. Rest and serve: Let the meatloaf rest for 5 mins before slicing into 6 portions. Finish with the remaining fresh parsley.

Notes

Mix the chicken gently to keep the meatloaf tender. Leftovers can be refrigerated in an airtight container for up to 4 days or frozen for up to 3 months.
