Cheddar Stuffed BBQ Bacon Bombs wrap juicy seasoned ground beef, melted sharp cheddar, smoky bacon, and sticky barbecue sauce into one hearty bite. They take 15 mins to prep and are an easy choice for game day, parties, or a fun dinne

  • 1 ½ lbs ground beef, preferably 80 percent lean and 20 percent fat
  • 1 cup sharp cheddar cheese, shredded or cubed
  • 1 large egg
  • ½ cup plain or seasoned breadcrumbs
  • 2 tablespoons milk
  • 2 cloves garlic, minced
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 12 thin slices bacon
  • ½ cup barbecue sauce, plus more for serving

Instructions

  1. Prepare the cheese: If using a block of cheddar, cut it into 12 small cubes and set aside.
  2. Mix the beef: Combine the ground beef, egg, breadcrumbs, milk, garlic, onion powder, smoked paprika, salt, and black pepper. Mix gently just until evenly combined.
  3. Stuff the bombs: Divide the beef mixture into 12 equal portions. Flatten each portion, place cheddar in the center, then bring the beef around the cheese and seal it completely.
  4. Wrap with bacon: Wrap one bacon slice around each beef ball. Tuck the ends underneath or secure them with toothpicks if needed.
  5. Glaze and bake: Heat the oven to 375°F. Arrange the bacon bombs on a parchment or foil lined baking sheet and brush lightly with barbecue sauce. Bake for 35 to 40 mins, turning halfway through, until the bacon is browned and the beef reaches 160°F.
  6. Finish and serve: Brush with additional warm barbecue sauce if desired. Serve hot while the cheddar center is melted.

Notes

Use thin bacon so it has time to brown before the beef is overcooked. Seal the beef completely around the cheddar to help prevent cheese from leaking out. Cooked leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
