Gooey chocolate caramel brownie bars stacked on a modern plate, with crackly brownie tops, thick caramel layers, and crumbs on a bright white marble surface.

Gooey Chocolate Caramel Brownie Bars are thick, fudgy chocolate bars layered with melted caramel and semi sweet chocolate chips. They bake into rich, chewy squares with a soft caramel center, making them a cozy dessert for bake sales, parties, or a sweet weekend treat.

Ingredients

Scale

For the Brownie Base:

  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 1 cup unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ teaspoon baking powder

For the Caramel Layer:

  • 1 11 oz package soft caramels, about 40 unwrapped
  • ⅓ cup heavy cream

Topping:

  • 1 cup semi sweet chocolate chips
  • Flaky sea salt, optional

Instructions

  1. Prepare the pan: Heat the oven to 350°F. Line a 9 by 13 inch baking pan with parchment paper or foil, leaving overhang, then lightly grease it.
  2. Mix the brownie batter: Whisk the melted butter and sugar until smooth. Add the eggs one at a time, stir in the vanilla, then fold in the flour, cocoa powder, salt, and baking powder just until combined.
  3. Bake the base: Spread half of the brownie batter into the prepared pan. Bake for 10 mins, until the top looks set but the base is still soft.
  4. Melt the caramel: Add the unwrapped caramels and heavy cream to a saucepan over low heat. Stir constantly until smooth, glossy, and pourable.
  5. Layer the bars: Pour the caramel over the baked brownie base and spread gently. Sprinkle with chocolate chips, then drop spoonfuls of the remaining brownie batter on top and spread lightly.
  6. Finish baking: Bake for 25 to 30 mins, until the top is set and slightly cracked. Cool completely, then chill for at least 1hr before slicing.

Notes

Melt the caramel over low heat so it stays smooth and does not scorch. For clean slices, chill the bars fully and wipe the knife between cuts. Store in an airtight container at room temperature for up to 3 days, refrigerate for up to 1 week, or freeze for up to 3 months.
