Glossy Pineapple Chicken Stir Fry

Glossy Pineapple Chicken Stir Fry is a sweet and savory chicken dinner with juicy pineapple chunks, crisp bell pepper, onion, and a shiny garlic ginger sauce. It cooks in one skillet and is great over rice or noodles when you want a cozy takeout style meal at home.

Chicken

  • 1 ½ lbs. boneless skinless chicken breasts, or thighs
  • Salt and pepper, to taste
  • 2 tablespoons cornstarch
  • 3 tablespoons peanut oil, or avocado oil or olive oil

Stir Fry

  • 1 20 oz. can pineapple chunks, juices reserved
  • ½ yellow onion, cut into one inch pieces
  • 1 red bell pepper, cut into one inch pieces
  • 3 green onions, sliced

Sauce

  • ¾ cup pineapple juice
  • ¾ cup chicken broth
  • ¼ cup soy sauce
  • 2 tablespoons ketchup
  • 2 ½ tablespoons honey
  • 1 ½ tablespoons rice vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon freshly grated ginger, or ¼ teaspoon ground ginger
  • 2 tablespoons cornstarch

Instructions

  1. Mix the sauce: Drain the pineapple chunks and reserve ¾ cup pineapple juice. Whisk the pineapple juice, chicken broth, soy sauce, ketchup, honey, rice vinegar, garlic, ginger, and cornstarch until smooth.
  2. Coat the chicken: Cut the chicken into bite size pieces and pat dry. Season with salt and pepper, then toss with 2 tablespoons cornstarch until evenly coated.
  3. Sear the chicken: Heat peanut oil in a large skillet over medium high heat. Cook the chicken in batches for 2 to 3 mins per side, until golden and cooked through, then transfer to a plate.
  4. Brown the pineapple: Add the drained pineapple chunks to the skillet and cook for about 3 mins, letting them sit briefly so they get golden edges. Transfer to the plate with the chicken.
  5. Cook the vegetables: Add the onion and red bell pepper to the skillet and sauté for 4 to 5 mins, until bright and crisp tender.
  6. Finish the stir fry: Whisk the sauce again, then pour it into the skillet. Bring to a boil, stir until glossy and thickened, then add the chicken and pineapple back in and simmer for about 3 mins. Top with sliced green onions.

Notes

For the best browning, cook the chicken in batches and avoid crowding the skillet. Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months. Reheat gently with a splash of broth or water to loosen the sauce.
