Fresh Avocado Feta Toast

Fresh Avocado Feta Toast is a quick, colorful breakfast or light lunch made with crisp sourdough, creamy avocado, juicy tomatoes, salty feta, sweet cranberries, and crunchy walnuts. It comes together in 10 mins and gives you that fresh café style toast feeling right at home.

  • 2 slices sourdough bread
  • 1 ripe avocado
  • ½ cup cherry tomatoes, halved
  • ¼ cup crumbled feta
  • 2 tbsp dried cranberries
  • 2 tbsp chopped walnuts
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 1 tsp honey
  • 1 tbsp fresh parsley or microgreens
  • ¼ tsp salt, or to taste
  • ¼ tsp black pepper, plus more for serving

Instructions

  1. Toast the bread: Toast the sourdough until golden, crisp, and sturdy enough to hold the toppings.
  2. Mash the avocado: Scoop the avocado into a small bowl and mash with lemon juice, salt, and black pepper until creamy but still a little chunky.
  3. Spread the base: Spoon the avocado over the warm toast and spread it evenly to the edges.
  4. Add the toppings: Scatter cherry tomatoes, feta, dried cranberries, and walnuts over the avocado, pressing larger pieces in lightly so they stay in place.
  5. Finish and serve: Drizzle with olive oil and honey, then top with parsley or microgreens and a little more cracked black pepper. Serve right away while the toast is crisp.

Notes

Toast the bread well so it does not soften too quickly under the avocado.
For extra protein, add a soft boiled egg, scrambled egg, smoked salmon, or sliced turkey.
Store toppings separately in the fridge for up to 2 days, but assemble the toast just before serving.
Freezing is not recommended because avocado and tomatoes lose their texture.
