Fluffy Homemade Pancakes

Fluffy Homemade Pancakes are soft, golden breakfast pancakes made with flour, milk, butter, egg, vanilla, honey, and warm spices. The batter comes together quickly and cooks into tender pancakes with lightly crisp edges, making them just right for weekend breakfast, brunch, or a freezer stash for busy mornings.

  • 2 cups flour, or 290 grams
  • 1/4 cup sugar
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • ¼ teaspoon cinnamon
  • 1 pinch nutmeg

Wet Ingredients

  • 1 ¾ cups milk
  • 4 tablespoons salted butter, melted and cooled slightly
  • 1 large egg
  • 1 ½ teaspoons vanilla extract
  • 1 teaspoon honey
  • Nonstick cooking spray
  • Additional salted butter, for coating the skillet

Instructions

  1. Whisk the dry ingredients: In a large bowl, whisk the flour, sugar, baking powder, salt, cinnamon, and nutmeg until evenly combined.
  2. Cool the butter: Melt the salted butter, then let it cool slightly so it blends into the batter without cooking the egg.
  3. Mix the batter: Add the milk, egg, vanilla extract, honey, and melted butter to the dry ingredients. Whisk just until combined, leaving a few small lumps.
  4. Heat the skillet: Warm a nonstick skillet or griddle over medium heat, then reduce to medium low. Lightly coat with nonstick cooking spray and a small amount of butter.
  5. Cook the pancakes: Pour ¼ cup batter into the skillet for each pancake. Cook for about 2 mins, until bubbles appear on top and small holes begin to stay open.
  6. Flip and finish: Flip the pancakes and cook for about 30 seconds more, until the second side is lightly golden and the centers are set. Repeat with the remaining batter.

Notes

Do not swap baking soda for baking powder, since the baking powder is what gives these pancakes their lift. Avoid overmixing the batter, because a few small lumps help keep the pancakes tender. Store cooled pancakes in the refrigerator for up to 3 days or freeze with parchment between layers for up to 3 months. Reheat in a toaster, warm skillet, microwave, or covered in a 350°F oven until hot.
