Fiery Chicken Ramen with Creamy Garlic Sauce combines golden crispy chicken thighs, springy ramen noodles, and a rich garlic broth made with cream, miso, Parmesan, and chili oil. It comes together in 30 mins for a cozy dinner with plenty of savory flavor and adjustable heat.

Crispy Chicken Bites

  • 1½ pounds boneless chicken thighs, cut into bite sized cubes
  • 2 tablespoons soy sauce
  • 2 tablespoons cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 tablespoon sesame oil
  • 2 tablespoons neutral oil

Creamy Garlic Broth

  • 8 garlic cloves, finely minced
  • 3 tablespoons butter
  • 4 cups chicken broth
  • ¾ cup heavy cream
  • 2 tablespoons soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon miso paste
  • ¼ cup grated Parmesan
  • 2 tablespoons chili oil, or to taste
  • 4 bricks ramen noodles
  • Sliced scallions, to taste
  • Chili flakes, to taste

Instructions

  1. Marinate the chicken: Toss the chicken with soy sauce, cornstarch, garlic powder, ginger powder, and sesame oil. Let it rest for 10 mins.
  2. Sear the chicken: Heat the neutral oil in a large skillet over medium high heat. Cook the chicken in a single layer for 3 to 4 mins per side, working in batches if needed, until golden brown and cooked through. Transfer to a plate.
  3. Cook the garlic: Reduce the heat to medium and melt the butter in the same skillet. Add the garlic and cook for 2 to 3 mins, stirring often, until fragrant and lightly golden.
  4. Make the broth: Add the chicken broth, heavy cream, soy sauce, mirin, miso paste, and Parmesan. Whisk until smooth and gently simmer for about 5 mins, until slightly thickened.
  5. Cook the ramen: Meanwhile, cook the ramen in boiling water for 1 min less than the package directions. Drain and briefly rinse with cold water.
  6. Finish and serve: Stir the chili oil into the broth. Divide the noodles among four bowls, ladle over the creamy broth, and top with crispy chicken, scallions, and chili flakes.

Notes

Keep the chicken in a single layer while searing so the coating becomes golden instead of steaming. For milder ramen, start with less chili oil and add more at the table. Store the broth and chicken separately from the noodles in the refrigerator for up to 4 days.
