Ingredients

Scale

Cupcakes

  • 1½ cups all purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup whole milk

Frosting

  • 2 cups powdered sugar
  • ½ cup unsalted butter, softened
  • 2 tablespoons whole milk
  • 1 teaspoon vanilla extract
  • Gel food coloring, as needed
  • Sprinkles, as needed
  • Candy eyeballs, as needed

Instructions

  1. Prepare the pan: Preheat the oven to 350°F. Line a standard 12 cup muffin pan with paper liners. Whisk the flour, sugar, baking powder, and salt together.
  2. Beat the butter: Beat the cupcake butter until creamy. Add the eggs one at a time, beating after each addition and scraping down the bowl.
  3. Mix the batter: Add the dry ingredients in portions, alternating with the milk and beginning and ending with the dry ingredients. Mix just until combined, then stir in the vanilla.
  4. Bake and cool: Divide the batter evenly among the liners. Bake for 18 to 20 mins, until a toothpick inserted into the center comes out clean. Cool completely in the pan.
  5. Prepare the frosting: Beat the frosting butter until creamy. Gradually beat in the powdered sugar, then add the milk and vanilla and beat until smooth.
  6. Decorate: Divide the frosting into bowls and tint with gel coloring. Spread or pipe onto the cooled cupcakes, then add sprinkles and candy eyeballs.
