Easy Seafood Linguine Marinara

Easy Seafood Linguine Marinara is a quick, cozy pasta with tender shrimp, fresh mussels, cherry tomatoes, garlic, butter, and linguine tossed in a light tomato wine sauce. It comes together in about 30 mins and makes a beautiful dinner with crusty bread, parsley, and a squeeze of lemon

  • 12 oz linguine
  • 1 lb large shrimp, peeled and deveined
  • 1 lb fresh mussels, cleaned and debearded
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 small onion, finely diced
  • 2 cups cherry tomatoes, halved
  • ½ cup dry white wine or seafood broth
  • 1 tsp Italian seasoning
  • ½ tsp crushed red pepper flakes, optional
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp chopped fresh parsley
  • 1 tbsp fresh lemon juice
  • Freshly grated Parmesan, optional

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook the linguine until al dente. Reserve ½ cup pasta water, then drain.
  2. Sauté the aromatics: Heat olive oil and butter in a large skillet over medium heat. Add onion and cook for 2 to 3 mins, then stir in garlic for 30 seconds until fragrant.
  3. Make the sauce: Add cherry tomatoes, Italian seasoning, crushed red pepper flakes, salt, and black pepper. Cook for 4 to 5 mins until the tomatoes soften and release their juices.
  4. Cook the mussels: Pour in the white wine or seafood broth and simmer for 2 mins. Add mussels, cover, and cook for 4 to 5 mins until the shells open.
  5. Add the shrimp: Stir in shrimp and cook for 2 to 3 mins until pink and opaque. Discard any mussels that do not open.
  6. Finish the pasta: Add linguine to the skillet and toss gently until coated. Add reserved pasta water as needed, then stir in lemon juice and parsley before serving hot with Parmesan if desired.

Notes

Clean mussels well before cooking and discard any cracked shells before they go into the pan. Do not overcook the shrimp, since they turn rubbery once they curl tightly and lose their glossy look. Leftovers can be stored in an airtight container in the fridge for up to 2 days and reheated gently in a covered skillet with a splash of broth or water.
