Easy Lasagna Soup is a cozy one pot dinner loaded with Italian sausage, tender lasagna noodles, rich tomato broth, fresh basil, and plenty of creamy cheese. It has all the comforting flavors of classic lasagna with much less work, making it perfect for an easy weeknight meal.

  • 1 pound Italian sausage
  • 1/2 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 28 ounce can crushed tomatoes
  • 4 cups beef broth
  • 1 cup water
  • 1/4 teaspoon Italian seasoning
  • 10 uncooked lasagna noodles, broken into smaller pieces
  • 1 to 2 tablespoons fresh basil, torn
  • Salt and pepper, to taste

Optional toppings

  • Ricotta, to taste
  • Parmesan cheese, grated, to taste
  • Mozzarella, shredded, to taste

Instructions

  • Brown the sausage and onion. Add the Italian sausage and onion to a large soup pot over medium high heat. Cook for 7 to 8 minutes, breaking up the sausage as it cooks, until browned and the onion is softened, then drain excess fat if needed.
  • Add the garlic. Stir in the garlic and cook for about 30 seconds, just until fragrant.
  • Build the broth. Stir in the crushed tomatoes, beef broth, water, and Italian seasoning. Increase the heat and bring the soup to a gentle boil.
  • Cook the noodles. Add the broken lasagna noodles, reduce the heat to maintain a steady simmer, and cook for 10 to 12 minutes. Stir every couple of minutes so the noodles do not stick together, and cook until tender with a slight bite.
  • Finish the soup. Stir in the fresh basil, then taste and season with salt and pepper as needed. Add a splash of water if the soup has become thicker than you prefer.
  • Serve with cheese. Ladle into bowls while hot and top with ricotta, grated parmesan, shredded mozzarella, or any combination you like.

Notes

Italian sausage can be mild or spicy depending on your preference. Chicken broth may replace the beef broth, but the flavor will be slightly lighter.

Leftovers keep in the fridge for 3 to 4 days. The noodles absorb more broth as they sit, so add a splash of water or broth when reheating.

For freezing, the best texture comes from freezing the soup before adding the noodles, then cooking fresh noodles in the soup after thawing.
