Easy General Tso’s Chicken is a sweet, savory skillet dinner made with crisp cornstarch coated chicken, a glossy hoisin soy sauce, and tender ramen noodles. It comes together in 35 mins and gives you that takeout style comfort without a complicated batter or deep fryer.

  • Boneless skinless chicken breasts, 2 pounds, about 3 breasts, cut into one inch pieces
  • Cornstarch, 1/2 cup
  • Vegetable oil, 1/4 cup
  • Hoisin sauce, 1/2 cup
  • Soy sauce, 2 tablespoons, plus more for serving if desired
  • Brown sugar, 1/4 cup firmly packed
  • Minced garlic, 2 heaping teaspoons, about 3 to 4 cloves
  • Rice vinegar, 3 tablespoons
  • Sesame oil, 1 teaspoon
  • Ground ginger, 1/2 teaspoon
  • Crushed red pepper, 1/2 teaspoon optional, plus more to taste
  • Ramen noodles, 3 3 ounce packets, seasoning discarded
  • Green onions, optional for garnish
  • Sesame seeds, optional for garnish

Instructions

  1. Coat the chicken: Add the cornstarch to a gallon size zip top bag. Add the chicken pieces, seal the bag, and shake until the chicken is evenly coated.
  2. Mix the sauce: In a medium bowl, stir together the hoisin sauce, soy sauce, brown sugar, garlic, rice vinegar, sesame oil, ground ginger, and crushed red pepper until smooth.
  3. Cook the noodles: Cook the ramen noodles according to the package directions without the seasoning packets. Drain well and set aside.
  4. Brown the chicken: Heat the vegetable oil in a large skillet over medium high heat. Shake off extra cornstarch, add the chicken, and cook until browned on all sides and cooked through, working in batches if needed.
  5. Simmer the sauce: Transfer the cooked chicken to a plate. Add the sauce to the skillet, bring it to a boil, then reduce to a simmer and cook for about 5 mins, until thickened and glossy.
  6. Finish and serve: Return the chicken to the skillet and toss until coated in the sauce. Add the cooked ramen noodles, toss again until saucy, then garnish with green onions, sesame seeds, and extra soy sauce if desired.

Notes

Shake off extra cornstarch before cooking so the coating browns instead of turning gummy in the skillet.
For a milder version, skip the crushed red pepper or use just a pinch.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet with a splash of water until hot
