Easy Beef Empanadas

Easy Beef Empanadas are filled with seasoned ground beef, onion, bell pepper, and plenty of melted Mexican cheese, all tucked inside flaky pie crust. They bake golden and crisp in just 30 mins, making them an easy dinner or savory appetizer with salsa or guacamole.

  • 1 package premade pie crust, 2 rolls
  • 1 pound lean ground beef
  • 1/4 cup yellow onion, diced
  • 1/2 medium bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon minced garlic
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 cup Mexican blended cheese
  • 1 large egg, beaten

Instructions

  1. Preheat the oven: Heat the oven to 350°F and line a baking sheet with parchment paper.
  2. Brown the beef: Cook the ground beef, onion, and bell pepper in a large skillet until the beef is fully cooked, the onion is translucent, and the pepper is tender. Drain off excess fat.
  3. Season the filling: Stir in the cumin, garlic, salt, black pepper, and chili powder. Cook for 2 mins, then remove the skillet from the heat.
  4. Cut the crusts: Unroll the pie crusts and use a cereal sized bowl to cut circles. Reroll the scraps as needed to make about 8 circles.
  5. Fill the empanadas: Place 2 to 3 tablespoons of beef filling in the center of each circle and top with about 1 tablespoon cheese. Fold the dough over into a half circle and firmly crimp the edges with a fork.
  6. Bake until golden: Brush each empanada with beaten egg. Bake for 12 to 15 mins, until the pastry is puffed and golden brown.

Notes

Don’t overfill the empanadas or the edges may open while baking. Unbaked empanadas can be frozen until firm, transferred to a freezer safe container, and stored for up to 3 months; thaw before baking
