Crispy Pepperoni Detroit Style Pizza

Detroit-style pepperoni pizza baked in a dark rectangular metal pan, fully visible on a bright white marble surface, with bubbly melted cheese, red tomato sauce, crispy cupped pepperoni, and caramelized browned edges.

Crispy Pepperoni Detroit Style Pizza is a thick square pan pizza with chewy bread flour crust, bubbling Jack and mozzarella, pizza sauce, and crisp pepperoni. The cheese bakes right to the edges for that dark golden border, making it a cozy dinner or pizza night recipe worth slicing into big squares.

Ingredients

Scale

For the Dough

  • 2¼ cups bread flour
  • 1 ½ teaspoons salt
  • 1 teaspoon instant yeast
  • ¾ cup warm water
  • 2 tablespoons olive oil

For the Topping

  • 6 ounces Jack cheese, cut into ½ inch dice
  • 6 ounces mozzarella cheese, cut into ½ inch dice
  • 6 ounces sliced pepperoni
  • 1½ cups pizza sauce

Instructions

  1. Mix the dough: Add bread flour, salt, and instant yeast to the bowl of a stand mixer fitted with a dough hook. Pour in the warm water and knead on medium low speed for 8 to 10 mins, until the dough forms a smooth ball.
  2. Let it rise: Transfer the dough to a lightly oiled bowl, cover it, and let it rise in a warm spot for about 2hr, until doubled and puffy.
  3. Stretch in the pan: Spread the olive oil into a Detroit style pizza pan. Place the dough in the pan, press it toward the edges, cover, and let it rest for 30 mins so it relaxes.
  4. Add the cheese: Heat the oven to 500°F. Stretch the dough into the corners, then scatter the diced Jack and mozzarella all the way to the edges of the pan.
  5. Sauce and top: Spoon the pizza sauce over the cheese in dollops, then arrange the pepperoni evenly over the top.
  6. Bake and slice: Bake for about 15 mins, until the edges are deeply browned, the cheese is bubbling, and the pepperoni is crisp. Loosen the pizza from the pan, move it to a cutting board, and cut into squares.

Notes

Use enough oil in the pan so the bottom crisps and the pizza releases cleanly. Do not stop the cheese short of the edges, because that contact with the pan is what creates the caramelized border. Store leftovers in the fridge for up to 2 days and reheat in a 350°F oven for about 10 mins.
