Crispy Cod with Lemon Dill Tartar is a quick seafood dinner with flaky cod fillets, a golden panko crust, and a creamy homemade sauce with lemon, dill, and capers. It comes together in 27 mins and works beautifully with fries, salad, slaw, or soft sandwich rolls

  • 4 fresh cod fillets
  • 1 cup panko breadcrumbs
  • ½ cup all purpose flour
  • 2 large eggs, beaten
  • ½ cup mayonnaise
  • 2 tbsp fresh dill, finely chopped
  • 1 tbsp lemon zest
  • 1 tbsp capers, minced
  • 1 tsp fresh lemon juice
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. Make the sauce: In a small bowl, whisk together the mayonnaise, lemon zest, lemon juice, chopped dill, and minced capers until smooth. Refrigerate for 30 mins so the flavor can settle.
  2. Season the fish: Pat the cod fillets dry with paper towels, then season both sides with salt and pepper.
  3. Set up coating bowls: Place the flour in one shallow dish, the beaten eggs in a second dish, and the panko breadcrumbs in a third.
  4. Bread the cod: Coat each fillet in flour and shake off the excess, then dip into the egg mixture. Press firmly into the panko breadcrumbs until evenly coated.
  5. Fry until crisp: Heat a thin layer of vegetable oil in a skillet over medium high heat. Fry the cod for 3 to 4 mins per side until golden brown and the fish flakes easily with a fork.
  6. Drain and serve: Transfer the cod to a paper towel lined plate or wire rack. Serve right away with the chilled lemon dill tartar sauce.

Notes

Make sure the oil is hot before adding the fish so the coating turns crisp instead of greasy.
Use a wire rack for draining if you want the bottom crust to stay crunchier.
Store leftover fish in an airtight container in the fridge for up to 3 days and reheat in the oven for the best texture.
