Crispy Cast Iron Skillet Pizza

Crispy Cast Iron Skillet Pizza is an easy homemade pizza with golden crust, marinara sauce, melted mozzarella, Parmesan, and oregano. It bakes in a cast iron skillet for a sturdy, crisp bottom and a bubbly cheese topping, making it a cozy dinner or movie night meal.

  • 12 oz. pizza dough, at room temp
  • 1 tablespoon olive oil
  • 2 tablespoons Parmesan cheese, grated
  • ¼ teaspoon dried oregano
  • ½ cup marinara sauce
  • 1 ¾ cups mozzarella cheese, whole milk low moisture
  • 1 tablespoon butter, melted
  • Optional toppings
  • 14 slices pepperoni
  • ¼ cup sliced onions and peppers

Instructions

  1. Heat the oven: Preheat the oven to 475°F and lightly grease a 12 inch cast iron skillet.
  2. Shape the dough: Roll the pizza dough into a 14 inch circle, then press it into the skillet and work it halfway up the sides. Roll the edge down slightly to form a thicker crust.
  3. Prebake the crust: Brush the dough with olive oil, sprinkle with Parmesan and oregano, and poke the surface with a fork. Bake on the lower oven rack for 5 mins.
  4. Add the sauce and cheese: Remove the skillet from the oven and dab away any extra oil if needed. Spread marinara sauce over the crust, then add mozzarella, pepperoni, onions, and peppers.
  5. Bake until bubbling: Return the skillet to the lower rack and bake for 10 mins, until the cheese is melted and the crust is firming up.
  6. Finish the crust: Brush the crust with melted butter, move the skillet to the upper rack, and bake for 3 mins more. Broil at 425°F for 1 min, watching closely, then rest for 3 to 5 mins before slicing.

Notes

Use whole milk low moisture mozzarella for the best melt and a less watery pizza. Avoid piling on too much sauce or too many wet toppings, since that can soften the center of the crust. Store leftovers in the refrigerator for up to 3 days and reheat in a skillet or 350°F oven until hot.
