Creamy Triple Berry Baked Oatmeal is a cozy gluten free and dairy free breakfast made with rolled oats, coconut milk, maple syrup, and plenty of strawberries, blueberries, and raspberries. It bakes into soft, sliceable oatmeal with golden edges and juicy berry pockets, making it easy for brunch or meal prep.

  • 2 eggs
  • ¼ cup pure maple syrup
  • 1 15 ounce can light coconut milk
  • 1 tablespoon vanilla extract
  • ¼ teaspoon almond extract

Dry ingredients:

  • 2 cups old fashioned rolled oats, certified gluten free if needed
  • ¼ cup unsweetened shredded coconut
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

Mix ins:

  • ¾ cup strawberries, hulled and halved
  • ¾ cup blueberries
  • ½ cup raspberries, or blackberries

Optional:

  • ¼ cup sliced raw almonds
  • ¼ cup unsweetened shredded coconut

Instructions

  1. Prep the pan: Preheat the oven to 350°F and grease a 9 by 9 inch baking pan with oil or nonstick cooking spray.
  2. Whisk the wet ingredients: In a large bowl, whisk the eggs, maple syrup, light coconut milk, vanilla extract, and almond extract until smooth and fully combined.
  3. Stir in the oats: Add the rolled oats, shredded coconut, baking powder, and salt, then stir until evenly mixed.
  4. Fold in berries: Gently fold in half of the strawberries, blueberries, and raspberries so the fruit is spread through the oatmeal.
  5. Top the pan: Pour the mixture into the prepared baking pan, smooth the top, then scatter the remaining berries over the surface. Add sliced almonds and extra shredded coconut if using.
  6. Bake and rest: Bake for 35 to 45 mins, until the edges are lightly golden and the center no longer jiggles. Let cool for 10 mins before slicing into 6 servings.

Notes

Use certified gluten free oats to keep this recipe gluten free.
If using frozen berries, thaw and drain them first so the oatmeal does not turn watery.
Store leftovers in an airtight container in the fridge for 4 to 5 days, or freeze individual slices for easy breakfasts.
Reheat slices in the microwave for 30 to 60 seconds, adding a splash of coconut milk if you like a softer texture
