  • 1 lb large shrimp, peeled and deveined
  • 4 slices turkey bacon, chopped
  • 2 tablespoons unsalted butter, divided
  • 1 tablespoon olive oil
  • 4 garlic cloves, finely minced
  • 1 ½ cups heavy cream
  • ¾ cup freshly grated Parmesan cheese
  • ½ cup reserved pasta water
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ¼ teaspoon red pepper flakes
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Cook the pasta: Bring a large pot of generously salted water to a boil. Cook the fettuccine or linguine until al dente, then reserve ½ cup pasta water before draining.
  2. Season the shrimp: Pat the shrimp dry and season with salt, black pepper, and garlic powder so they brown instead of steaming.
  3. Sauté the shrimp: Heat olive oil and 1 tablespoon butter in a large skillet over medium heat. Cook the shrimp for 1 to 2 mins per side, until opaque and lightly golden, then transfer to a plate.
  4. Cook the bacon: Add chopped turkey bacon to the same skillet and cook until lightly browned, stirring often so the pieces crisp without burning.
  5. Make the sauce: Add the remaining 1 tablespoon butter and minced garlic to the skillet. Cook for about 30 seconds, then pour in the heavy cream and stir in Parmesan, Italian seasoning, and red pepper flakes until smooth.
  6. Toss and finish: Add the drained pasta and shrimp back to the skillet. Toss until coated, adding reserved pasta water a splash at a time until the sauce is glossy and silky, then finish with parsley and black pepper.

Notes

Use freshly grated Parmesan for the smoothest sauce. Keep the cream sauce at a gentle simmer after adding the cheese so it does not turn grainy. Store leftovers in an airtight container in the fridge for up to 3 days and reheat gently with a splash of milk, cream, or pasta water.
