Creamy Lobster Stuffed Shells

Creamy Lobster Stuffed Shells are a rich seafood pasta bake filled with tender lobster, ricotta, mozzarella, Parmesan, and garlic. The shells bake in a silky cream sauce until bubbly, making this a cozy dinner that feels special but still comes together in 45 mins.

  • 20 jumbo pasta shells
  • 1 lb cooked lobster meat, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese, divided
  • 2 cloves garlic, minced and divided
  • 2 tbsp butter
  • 1½ cups heavy cream
  • 1 tbsp fresh parsley, chopped
  • ½ tsp paprika
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook the shells: Bring a large pot of salted water to a boil and cook the jumbo shells until al dente. Drain carefully and lay them out so they do not stick together.
  2. Make the filling: In a bowl, mix the lobster, ricotta, mozzarella, ¼ cup Parmesan, half the garlic, paprika, a little parsley, salt, and black pepper until creamy and thick.
  3. Stuff the shells: Spoon the lobster filling into each shell, mounding it gently so the shells are well filled. Arrange them open side up in a buttered baking dish.
  4. Prepare the sauce: Melt the butter in a saucepan over medium heat, then cook the remaining garlic for about 30 seconds. Add the heavy cream and simmer for 3 to 5 mins, then stir in the remaining Parmesan until smooth and lightly thickened.
  5. Bake the pasta: Pour the cream sauce over the stuffed shells. Cover loosely with foil and bake at 375°F for 15 mins, then uncover and bake 5 more mins until bubbly around the edges.
  6. Finish and serve: Let the shells rest for 5 mins before serving. Sprinkle with the remaining parsley, extra black pepper, and a pinch of paprika if you like.

Notes

Do not overcook the shells before stuffing, since they will soften more in the oven.
Pat the lobster dry if it seems wet so the filling stays creamy instead of loose.
Store leftovers in an airtight container in the fridge for up to 2 days and reheat covered until hot in the center
