  • 300 g fettuccine
  • 2 cups broccoli florets

  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese

  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • Salt, to taste
  • Black pepper, to taste
  • 1 tbsp olive oil
  • Fresh parsley, chopped

Instructions

  1. Season the chicken: Pat the chicken dry, then season both sides with paprika, Italian seasoning, salt, and black pepper.
  2. Sear the chicken: Heat olive oil in a large skillet over medium high heat. Cook the chicken for 5 to 6 mins per side, until golden brown and cooked through, then rest and slice.
  3. Cook the pasta: Boil the fettuccine in salted water according to package directions. Add the broccoli during the last 2 to 3 mins, then drain well.
  4. Start the sauce: In the same skillet, melt the butter over medium heat and sauté the garlic for about 30 seconds, just until fragrant.
  5. Simmer until creamy: Add the chicken broth and heavy cream, then simmer gently for 2 to 3 mins.
  6. Finish and serve: Stir in the Parmesan until melted and smooth. Toss in the fettuccine, plate with broccoli, top with sliced chicken, and garnish with fresh parsley.

Notes

Use freshly grated Parmesan for the smoothest sauce. Keep the heat low once the cheese goes in so the Alfredo stays creamy instead of turning grainy. Store leftovers in an airtight container in the fridge for up to 3 days and reheat gently with a splash of cream, broth, or milk.
