  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 3 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded provolone cheese
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • 1 cup cottage cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Prepare the noodles: Heat the oven to 375°F. Cook the lasagna noodles according to the package directions until just tender, then drain well.
  2. Brown the beef: Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it into small crumbles. Stir in the garlic, salt, black pepper, and Italian seasoning.
  3. Add the marinara: Pour 3 cups marinara sauce into the beef and stir until combined. Let the sauce heat through for a few minutes.
  4. Mix the filling: Combine the cottage cheese, eggs, Parmesan, and parsley until evenly mixed.
  5. Layer the lasagna: Spread some meat sauce in the bottom of a baking dish. Layer with noodles, cottage cheese mixture, meat sauce, mozzarella, and provolone. Repeat the layers, finishing with cheese on top.
  6. Bake the lasagna: Bake for about 40 mins, until hot throughout and the cheese is melted, bubbling, and golden in spots. Let the lasagna rest briefly before slicing.

Notes

Cook the noodles only until just tender since they’ll continue cooking in the oven. Drain excess grease from the beef before adding the marinara, and let the finished lasagna rest before slicing so the layers hold together better
