Balsamic Flank Steak with Blue Cheese

Balsamic Flank Steak with Blue Cheese is a juicy skillet steak with a tangy balsamic Dijon marinade and a creamy, salty blue cheese finish. It cooks quickly once marinated, making it a strong dinner choice for a busy night or a simple steakhouse style meal at home.

  • ¼ cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • ¾ cup blue cheese, crumbled
  • 2 tablespoons unsalted butter
  • 1 tablespoon fresh parsley, finely chopped

Instructions

  1. Mix the marinade: Whisk together the balsamic vinegar, olive oil, Dijon mustard, garlic, Worcestershire sauce, and brown sugar until smooth.
  2. Marinate the steak: Place the flank steak in a shallow dish or zip top bag and pour the marinade over it. Refrigerate for at least 1 hour, preferably up to 4 hours, turning once.
  3. Dry and season: Remove the steak from the marinade and pat it very dry with paper towels. Season both sides generously with salt and black pepper.
  4. Sear the steak: Heat a cast iron skillet over medium high heat until very hot. Add the butter and let it melt and foam, then sear the steak for 4 to 5 mins per side for medium rare or until cooked to your liking.
  5. Rest with cheese: Transfer the steak to a cutting board and immediately top with the crumbled blue cheese. Let it rest for 5 to 7 mins so the juices settle and the cheese softens.
  6. Slice and serve: Slice the steak thinly against the grain, garnish with parsley, and spoon any board juices over the top.

Notes

Pat the steak dry before searing so it browns instead of steaming.
For a milder finish, swap the blue cheese for goat cheese or feta.
Store leftovers in an airtight container in the fridge for up to 3 days and reheat gently in a skillet over low heat.
