for a cold and creamy option. This one is especially good when you want a fruit dessert that does not need rolling, crimping, or a mixer. If you like make ahead sweets, [No Bake Peanut Butter Pie](https://thesavorymama.com/no-bake-peanut-butter-pie/) is another cozy one to keep in your back pocket. Serve it warm with vanilla ice cream, spoon it into bowls, and let that blackberry syrup run into the crust. I tested this with frozen berries straight from the freezer, and the texture stayed much better than the batch where I let them thaw first. ## Why You'll Love This Easy Blackberry Cobbler * **Simple batter:** The flour, sugar, milk, and butter stir together in one bowl. * **Juicy berries:** Blackberries bake into the cobbler and make sweet pockets of fruit. * **Golden top:** The sugar added near the end gives the crust a lightly crisp finish. * **Beginner friendly:** No pastry skills, mixer, or special baking steps are needed. * **Ice cream ready:** Warm cobbler and cold vanilla ice cream are exactly right together. ## Ingredients You'll Need This short list turns into a bubbling fruit cobbler with a tender center and sugary top. * **Sugar:** 1 1/4 cups plus 2 tablespoons, separated, sweetens the batter and finishes the top. * **Self rising flour:** 1 cup gives the cobbler lift and keeps the texture soft. * **Milk:** 1 cup loosens the batter, with whole milk giving the richest result. * **Butter:** 1/2 stick melted, equal to 4 tablespoons, adds richness to the crust. * **Blackberries:** 2 cups fresh or frozen, rinsed and patted dry if fresh. * **Vanilla ice cream:** for serving, because the warm cobbler tastes best with something cold and creamy. ## Step by Step Instructions 1. **Heat the oven:** Preheat the oven to 350°F and grease a 9 by 9 inch baking dish. Keep the dish close by because the batter comes together quickly. 2. **Mix the batter:** Stir 1 cup sugar with the self rising flour in a large bowl. Add the milk, then stir in the melted butter until the batter looks smooth and combined. 3. **Fill the dish:** Pour the batter into the prepared baking dish and spread it gently into an even layer. Scatter the blackberries over the top, letting them sit on the batter instead of stirring them in. 4. **Add sugar:** Sprinkle 1/4 cup sugar evenly over the berries and batter. Bake for 50 mins, until the edges are bubbling and the top is starting to look golden. 5. **Finish baking:** Remove the dish from the oven and sprinkle the remaining 2 tablespoons sugar over the top. Return it to the oven for 10 mins more, until the cobbler is golden brown and the fruit is bubbling. 6. **Serve warm:** Let the cobbler rest for a few minutes so the juices settle slightly. Spoon it into bowls while warm and add vanilla ice cream right before serving. ## Recipe Tips * **Use frozen berries:** Add frozen blackberries straight from the freezer so they hold their shape better. * **Grease well:** Coat the baking dish before adding the batter so the sugary edges release more easily. * **Avoid stirring:** Do not mix the berries into the batter, since they sink naturally as the cobbler bakes. * **Watch the top:** The final 10 mins should give you a golden crust, not a dry or overly dark one. ## Variations and Customization Ideas * **Berry mix:** Use blueberries, raspberries, strawberries, or a mix of berries in place of some blackberries. * **Peach option:** Swap in sliced peaches for a softer, sweeter fruit cobbler. * **Spiced top:** Add a little cinnamon to the sugar before sprinkling it over the cobbler. * **Dairy swap:** Use your favorite milk and a plant based butter if that works better for your kitchen. * **Budget move:** Use frozen blackberries when fresh berries are pricey or out of season. ## Serving Suggestions * **Classic bowl:** Serve warm with a scoop of vanilla ice cream melting into the berries. * **Whipped cream:** Add lightly sweetened whipped cream for a softer, bakery style finish. * **Brunch table:** Spoon small portions beside pancakes, eggs, and coffee for a sweet morning treat. * **Dessert spread:** Pair it with [No Bake Cheesecake Dip](https://thesavorymama.com/no-bake-cheesecake-dip/) when you want one warm dessert and one cold option. * **Extra fruit:** Add fresh blackberries on the side for a bright, juicy contrast. ## How to Store and Reheat Store leftover blackberry cobbler covered at room temperature for up to 3 days, or in the refrigerator for up to 1 week. Let it cool fully before covering so steam does not make the top soggy. This cobbler can be frozen after baking. Wrap cooled portions tightly and freeze for up to 3 months. Reheat refrigerated or thawed cobbler in a covered oven safe dish at 350°F until warmed through. A small portion can also be reheated in the microwave, though the topping will be softer. For the best texture, reheat only what you plan to serve. Do not leave cobbler with ice cream sitting out for more than 2 hours. ## Recipe FAQ's ### Can I use frozen blackberries for blackberry cobbler? Yes, frozen blackberries work well. Add them while they are still frozen so they do not turn mushy before baking. ### Why do the blackberries go on top of the batter? The berries sink into the cobbler as it bakes. Leaving them on top at first helps the batter rise around them and keeps the texture light. ### Can I make self rising flour at home? Yes. For 1 cup self rising flour, use 1 cup all purpose flour with 1 1/2 teaspoons baking powder and 1/2 teaspoon salt. **Easy Blackberry Cobbler** is simple, cozy, and exactly the kind of fruit dessert that makes a regular night feel sweeter. The batter is quick, the berries do the work in the oven, and the sugary top gives every scoop a little crunch.
